Did you check in MRT option and Engineer option?

In MRT, there is just the BT ADDRESS.
In Engineer, there is :
OVD support : 1 ?
CVEE : ON ?

Well I didn't enter to service menu in my neo qled for now so I can't tell you more. Maybe they changed structure of that menu. I don't know

I think that for neo qled, the module is now WIFI/Bluetooth and IR so removing the cable will not be possible. THere will be no way to control the TV with an IR remote.

I was not able to use the FACTORY+3SPEED trick because it runs a special video test.
But perhaps, there is another way to unlock some settings ?

Another possibility, would be to connect a usb-serial and use putty to make a serial connection. But I don't know what sort of cable I need : for neo qled the serial connection is usb.
And I don't know the password to use after the connection.
But, with a "serial" connection, perhaps there are more settings available.

Did you succed? When you entered to service menu with app tv must be on some aerial channel. Now I sow on your fotos looks like you were on YouTube apps Try with this app Samsung Service Remote Control

no, I was not able to enter a very special menu at the moment using the FACTORY+3SPEED trick because the neo qled 2021 seems to be different.
The INFO + FACTORY trick works and it opens the menu (my fotos).
I just tried again the FACTORY+3SPEED trick above an aerial channel and it failed too. When I click the 3SPEED button, there is a color test which starts.
I use a Logitech Harmony Remote, perhaps the 3SPEED encoded in the Harmony Remote Software has a problem ?
But I don't have any smartphone with IR, so no possibility to use the IR android application.

For the moment, I put a EMF Shielding Fabric under the WIFI/Bluetooth/IR module and it removes a lot of microwaves but it is not perfect.

Perhaps someone with a recent neo qled will check if the FACTORY+3SPEED trick works with its TV.

to use FACTORY + 3SPEED you need to first enter service menu with remote INFO MENU MUTE POWER and once inside service menu you send FACTORY + 3SPEED and should open Extended service menu.

Yes, I also tried INFO MENU MUTE POWER and FACTORY + 3SPEED. But the problem is the 3SPEED which runs a video test.
Perhaps, there is another way to open an Extended service menu for 2021 NEO QLED ?
