I think if you mount-bind the transpoder directory (or file), you could edit that file...
mount --bind /patch_to/old_file /patch_to/new_file

It's possible to add a transponder from the TV's Dish menu. See http://forum.samygo.tv/viewtopic.php?f=9&t=2192#p18506
Alternatively, do a manual scan but turn on the option of NIT (Network Information Table) & the TV should read from the broadcast NIT details of any new transponders.

On my TV with English menus it is:
Menu -> Dish -> Manual Store -> Network Search <===change this option to enable NIT search on the currently selected transponder.
